This special cheese has been aged a minimum of six months.  A mellow, slightly tangy flavor with a rich, smooth finish.  This cheese is a favorite of cheese cravers.  Texture is slightly dry, but never crumbly.  An excellent match with any wine, specifically Zinfandel, Pinot Noir or Merlot.
