A traditional, mild, white cheese.  Named for the procedure of using bricks to press the curd; still being made in our 125 year old factory.  Creamy, mild, slightly salty.

This cheese is sold as an entire loaf of 6 pounds. If you are having a large scale event, this is a good solution.
